Eggs are used in this dish as binders of dry and wet ingredients. Substitute the wheat flour or any flour for the eggs and make the french toast as normally.
What you need
Makes 6 slices and takes about 30 minutes
1 cup almond milk or other plant-milk
1/4 cup + a 1/2 of a 1/4 cup whole-wheat pastry flour or any other flour you have
1 tablespoon maple syrup (substitute honey or agave)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon, nutmeg and ginger
6 slices whole-grain bread
spray vegetable oil
Pour the flour and seasoning into a bowl. Then combine those with the milk. Stir using a whisk, spoon, fork or your finger until smooth. At this point if you want add alittle more flour or seasonings to taste that’s fine. But don’t over do it!!
Dip the bread real quick in the mixture. It should be soft but not soggy. If you are using that regular store bought thin bread, just dip it in enough to cover it. The amount of time this takes will vary depending on the bread used.
