Honey Roasted Granola and Berry Yogurt

Whew! It has been a super busy last couple of months! With the covid pandemic, increasing hospital demands, and the everyday stresses of life we have all been very busy.

When things get busy, it can be difficult to maintain a healthy balanced diet. This takes time, preparation, and intentionality. In these busy moments, it is best to keep it simple and easy.

Check out this quick, easy, and healthy go to breakfast or lunch to keep you full and satisfied in between those busy moments. The greek yogurt can be a bit tart, but the balance of berries and granola add a texture and sweetness that is very complimentary.

Ingredients

  • 1 Cup of your favorite Greek Yogurt

  • 1 handful of blueberries

  • 1 handful of raspberries

  • Honey Roasted Granola

  • Honey to taste

Directions

  • Pour a hearty helping of your favorite greek yogurt into bowl
  • Top with berries
  • Top with granola
  • Add honey to taste
  • Enjoy!

Sweet and hearty oatmeal to keep warm on early winter mornings.

Ingredients

  • 1 Cup of your favorite oatmeal

  • 1/4 Cup Almond milk

  • ½ Cup Blackberries

  • 2 Tsp Vanilla Extract

  • Cinnamon to taste

  • ½ Cup of vanilla granola

  • 1 Tsp honey

Directions

  • Make oatmeal per given instructions on package.
  • Mix together almond milk and vanilla extract.
  • Add cinnamon to taste.
  • Top oatmeal with blackberries, granola, and honey.

Avocado Toast Four Ways

Oatmeal, grits, cereal, and fruits are all great breakfast options, but you know they can get old pretty quickly. For many of us, its super important that breakfast foods are quick, easy, healthy, and transportable. Insert Avocado Toast 🙂 This quick, cheap, and easy breakfast will keep you full for hours and is super simple to prepare. If you prepare the toppings the night before, this meal can be made in less than 5 minutes. Additionally, pair it with multi-grain whole wheat toast and you are sure to get great nutritional value. 

Also, you can top your avocado with just about anything. Don’t like strawberries? Consider topping your toast with healthy pomegranate seeds or smoked chickpeas. The options are endless and the nutritional value is plentiful.

Ingredients
  1. 3 Avocados
  2. 4 pieces of bread, lightly toasted
  3. 1 group vine tomato
  4. 1 egg, pan fried
  5. 2 oz smoked salmon
  6. 2 strawberries
Instructions
  1. Lightly Toast bread
  2. Open avocado and mash together in small bowl
  3. Top Avocado on bread
  4. Top Avocado toast with diced strawberries, tomatoes, fried egg, and smoked salmon!

Peanut Sesame Zoodles with Crispy Tofu

Pasta is hearty, wonderful, and often gives you that feeling of content. Pasta is also packed with carbohydrates that can increase your blood sugars and pack on some weight. Peanut Sesame Sauce
  1. 1/2 cup peanut butter
  2. 1/3 cup sesame oil
  3. 1/3 cup light low sodium soy sauce
  4. 1/4 cup rice vinegar
  5. 2 tablespoons sugar
  6. 1 clove garlic, minced
  7. 1 knob of fresh ginger, peeled and grated
  8. 12 ounces extra firm tofu
  9. 1 cup corn starch
  10. 2 zucchini
Instructions
  1. Toss the sauce ingredients in the food processor until blended and smooth. Set Aside.
  2. Remove Tofu from package and liquid. Place on paper-towel and place heavy item on top to press excess moisture out of the tofu. This should take 5-10 mins.
  3. Once moisture is removed, cut into bite sized pieces.
  4. Toss Tofu pieces with cornstarch
  5. Heat a tiny bit of oil in a nonstick pan. Add the tofu and stir fry until golden brown.
  6. Add about 1/2 cup sauce and simmer until the sauce starts to evaporate
  7. gently flip the tofu so all parts are covered
  8. Spiralize your zucchini and toss with about 1/4 cup sauce per serving.
  9. Top with tofu and serve immediately.
