Honey Roasted Granola and Berry Yogurt

Whew! It has been a super busy last couple of months! With the covid pandemic, increasing hospital demands, and the everyday stresses of life we have all been very busy.

When things get busy, it can be difficult to maintain a healthy balanced diet. This takes time, preparation, and intentionality. In these busy moments, it is best to keep it simple and easy.

Check out this quick, easy, and healthy go to breakfast or lunch to keep you full and satisfied in between those busy moments. The greek yogurt can be a bit tart, but the balance of berries and granola add a texture and sweetness that is very complimentary.

Ingredients

  • 1 Cup of your favorite Greek Yogurt

  • 1 handful of blueberries

  • 1 handful of raspberries

  • Honey Roasted Granola

  • Honey to taste

Directions

  • Pour a hearty helping of your favorite greek yogurt into bowl
  • Top with berries
  • Top with granola
  • Add honey to taste
  • Enjoy!

Sweet and hearty oatmeal to keep warm on early winter mornings.

Ingredients

  • 1 Cup of your favorite oatmeal

  • 1/4 Cup Almond milk

  • ½ Cup Blackberries

  • 2 Tsp Vanilla Extract

  • Cinnamon to taste

  • ½ Cup of vanilla granola

  • 1 Tsp honey

Directions

  • Make oatmeal per given instructions on package.
  • Mix together almond milk and vanilla extract.
  • Add cinnamon to taste.
  • Top oatmeal with blackberries, granola, and honey.

Avocado Toast Four Ways

Oatmeal, grits, cereal, and fruits are all great breakfast options, but you know they can get old pretty quickly. For many of us, its super important that breakfast foods are quick, easy, healthy, and transportable. Insert Avocado Toast 🙂 This quick, cheap, and easy breakfast will keep you full for hours and is super simple to prepare. If you prepare the toppings the night before, this meal can be made in less than 5 minutes. Additionally, pair it with multi-grain whole wheat toast and you are sure to get great nutritional value. 

Also, you can top your avocado with just about anything. Don’t like strawberries? Consider topping your toast with healthy pomegranate seeds or smoked chickpeas. The options are endless and the nutritional value is plentiful.

Ingredients
  1. 3 Avocados
  2. 4 pieces of bread, lightly toasted
  3. 1 group vine tomato
  4. 1 egg, pan fried
  5. 2 oz smoked salmon
  6. 2 strawberries
Instructions
  1. Lightly Toast bread
  2. Open avocado and mash together in small bowl
  3. Top Avocado on bread
  4. Top Avocado toast with diced strawberries, tomatoes, fried egg, and smoked salmon!

Melanin, Macadamia Nuts and Memorial Day

 

Macadamia Nut & Coconut Cream Cheese Spread over French Toast

For the French Toast
  1. Thomas Bagel Thins
  2. 1 egg
  3. 1/2 cup of Macadamia Milk
  4. 1 tablespoon of Vanilla extract
  5. 1 teaspoon of Cinnamon
  6. 1/2 tablespoon of butter
  7. For the Macadamia- Coconut Cream Cheese Spread
  8. A Food Processor
  9. 1/2 block of low fat cream cheese
  10. 1 package of Macadamia Nuts
  11. 1/2 cup of shredded Coconuts
  12. 1/2 can of diced Pinepapples in juice
Instructions
  1. Combine all of the ingredients in a food processor to make the Cream Cheese spread. Process until the spread is creamy and with a velvety texture. Then empty it all out and place in the refrigerator for to chill
  2. Preheat saucepan to medium heat and oven to 350 degrees place the butter in the sauce pan.
  3. Whisk together the egg, macadamia milk, vanilla, and cinnamon until fully combined
  4. Dip the bagel thins in the egg batter until fully coated on both sides. Toss them into the pan for
  5. 3-4 minutes each side, or until you achieve the level of brown you desire. Take out and place on an oven sheet and bake for 5-7 minutes. (this step takes your french toast game to a whole new level)
  6. Take the toast out of the oven and let cool for about 5 minutes. Meanwhile take the cream cheese spread of the refrigerator and spread it onto the french toast....as much as you want
  7. Eat a slice of heaven and go about your day
Notes
  1. If you are a insulin dependent diabetic, be sure to adjust your insulin shot according to your physicians recommendations.

The sun is shinning and the month of May is for Melanin and Memorial Day.

This post will celebrate  what happens when your Melanin is literally popping and The Macadamia Nut. This super food has so much Vitamin A that will increase protection of your skin and help repair itself. Vitamin A is a fat soluble molecule necessary for skin repair and additionally provides protection from the harsh external environments. Additionally, Vitamin A supplements are good for those with Inflammatory Bowel Disease and Psoriasis because it can decrease the inflammation in your skin and your GI tract. Learn more by googling Macademia Nuts….like wow. The more you know!

However, skin can become unchecked and begin forming a tumor. This tumor is called Melanoma, which is an aggressive skin cancer from pigment producing melanin cells in our skin.  It can develop anywhere on the body that has pigment such as your nails, skin, mouth etc. Your risk of melanoma increases most after the age of 30. It is most commonly seen in Caucasian skin tones but African Americans are also susceptible to it.

The most important risk factor for Melanoma is the sun and its UV rays as well as tanning beds.  The best way to recognize  a potential Melanoma is a skin exam by Dermatologist. But if you see any of the alarm features on your skin with the chart below, please schedule an appointment with a Dermatologist ASAP!

So let’s make sure we wear our sunscreen when we are out grilling, day brunchin and day grilling people!

Berry Acai Bowl

Acai is back wearing the 45! We previously posted about the amazing health benefits that acai provides. Check out the previous post under christmas day acai bowl for a refresher. Try out this recipe for a berry acai bowl for a quick and easy breakfast meal or a light pre-workout meal to keep you fit and trim during the winter months!

Ingredients
  1. 2 cups frozen strawberries
  2. 2 frozen sliced bananas
  3. 1 packet sambazon acai
  4. 1 cup frozen blueberries
  5. 1 cup unsweetened almond milk (or milk of choice)
  6. 2 tablespoons granola
  7. Honey to taste
Instructions
  1. Add the frozen fruits, acai, almond milk, and honey to a blender.
  2. Blend until creamy and smooth, adding extra almond milk as needed.
  3. Aim for a frozen-yogurt consistency
  4. Spoon the acai mixture into bowls and top with sliced fruit, a drizzle of honey, and granola.

Christmas Day Acai Bowl

Acai, pronounced ah-sigh-ee, is one of gods many great gifts to man-kind. This nutrient dense berry has been called purple gold due to its amazing health benefits. Acai boasts anti-oxidant, anti-cholesterol, and anti-inflammatory benefits. In a small study of women, daily consumption of acai showed favorable actions on plasma HDL (ie good cholesterol) metabolism and anti-oxidant defense; therefore acai could have a beneficial overall role against atherosclerosis, cancer, and arthritis. Because açaí berries can spoil within a day, the best ways to buy them are frozen (we recommend Sambazon’s superfruit packs) or in powdered form.

  1. ½ cup light coconut milk
  2. 1 cup frozen strawberries
